Cilantro Guacamole

      Guacamole stands on it's own and needs no introduction in terms of its health benefits. We all know how beneficial it is to incorporate healthy fats into our daily diet and the healthy fat in avocados make up 77% of the total calories which keeps you full and satiated longer. Boasting more potassium than bananas they are an impressive fruit. Throw in some cilantro for some added flavor and health benefits including aiding the body in detoxification, lowering blood sugar levels, and possessing antibacterial/antifungal properties. It's a slice of heaven in a bowl!

Ingredients

  • 3 Avocados (must be ripe and the flesh should give a little when pressed on)

  • 2 Vine Ripened Tomatoes

  • 1 Small Onion, minced

  • 2 Cloves of Garlic, minced

  • 1/4 Cup Cilantro, chopped

  • 1 Lime, juiced

  • 1 tsp Cumin

  • 1/2 tsp. Sea Salt

1/2 tsp cayenne pepper

Instructions

  1. Using a knife cut the avocado in half and remove the pit.

  2. Gently dice the avocado (in the flesh) by cutting it in length wise and then across. With a spoon remove the avocado and place in a small bowl.

  3. Add the lime juice and gently stir. Add the tomatoes, onion, garlic, cilantro, cumin, sea salt, and cayenne and combine with the avocado.

  4. Serve right away or cover and refrigerate for several days.
