Almond Butter Energy Bites

    Some of our favorite healthy snacks are the usual apples, oranges, carrots and celery but we like to break up the monotony of our routine with something new. This recipe is so easy your kids could help out and you can know that your feeding them real and nutritious food. I'm hoping these will last a little longer than my latest grocery haul but something tells me that's wishful thinking. Happy snacking!

Ingredients

  • 2/3 C almond butter

  • 1 C old fashioned oatmeal

  • 1/2 C chocolate chips

  • 1/2 C ground flax seed

  • 1/2 tsp. cinnamon

  • 2 tbsp. honey (or maple syrup)

Instructions

  1. In a medium sized bowl combine all the ingredients listed. Stir well.

  2. Place the bowl in the refrigerator for 20 minutes.

  3. Remove the bowl from refrigerator and with a melon baller or tablespoon take a small portion and then roll it into a ball with your hands.

  4. You can eat these right away or store for a week in the refrigerator.
