Loaded Sweet Potato Nachos
Nachos are the perfect dinner that is both filling and satisfying and easy to prepare on a Friday night when schedules go out the door and fun is mandatory. The backpacks are hung and alarms are turned off and the weekend with those I love most are in view.
Sweet potatoes have to be one of our favorites around here and a healthier alternative to other options with it's lower glycemic index. Packed with vitamin A (in the form of beta carotene), vitamin c, and dietary fiber they are potatoes healthier and better looking cousin that leave you feeling a little less regretful of last nights choices.
Ingredients

3 large sweet potatoes, thinly sliced with a mandolin

2 cups chicken, shredded

1 can black or pinto beans, drained and rinsed

3 green onion, diced

1 cup guacamole

Salt to taste
Instructions

Preheat oven to 375 degrees and line baking sheets with oil.

Slice sweet potatoes with a mandolin and arrange on baking sheet and lightly salt

Bake the sweet pantoates for 30-40 minutes.

Remove from oven and let cool 5 minutes.

Arrange sweet potato chips on platter and add in ingredients in the following order: chicken, beans, green onions and guacamole.
