Thumbprint Cookies

     With a little bit of creativity and some healthier ingredient swaps I made these sweet little Thumbprint Jam Cookies. What I love about these cookies...they can easily be changed up with whatever jam you are in the mood for. 


Want strawberry flavored cookies? Or perhaps you're in the mood for raspberry flavored ones? You do you baby!


Ingredients

2.5 C almond flour

1/2 Tsp. baking powder

1/2 salt

3/4 C coconut oil or ghee

1 Tsp. stevia powder

1 Tsp. vanilla

1 Large egg

1/3 C Jam (of your choice)

Instructions

  1. Preheat oven to 350 degrees and cover with parchment paper.

  2. In a medium bowl mix the flour, baking powder, salt and stevia.

  3. In a separate bowl mix one large egg and coconut oil. Mix well.

  4. Add liquid mixture to the flour and stir well.

  5. With a melon baller drop cookie dough onto parchment paper.

  6. With thumb gently press down in the center of the cookie to form a small well.

  7. Place jelly in the middle of the cookie.

  8. Bake at 350 degrees for 15 minutes.

  9. Makes 20 cookies.
