Summer Fruit Crumble

       We thoroughly enjoyed this summer fruit crumble both for dessert and again in the morning. This is listed under "desserts" but when you make it as healthy as this is you can enjoy it first thing in the morning and not feel guilty about it. 


     The cassava flour is a great replacement for whole wheat flour and it's naturally sweetened with honey and erythritol. The crumble ingredients can easily be doubled for those who like a little of the extra good stuff in life. Enjoy!



Ingredients

Filling:

  • 8-10 fresh peaches, sliced

  • 1 C fresh strawberries, sliced

  • 1/2 C fresh blueberries

  • 1 tsp. cinnamon

  • 1 tsp. lemon juice

  • 2 tsp. cassava flour

Topping:

  • 1 C cassava flour

  • 1 1/4 C old fashioned oats

  • 1/2 tsp. baking soda

  • 2 tbsp. erythritol 

  • 1 tsp. ground cinnamon

  • 1/2 tsp. salt

  • 1/2 C coconut oil

Instructions

  1. Preheat oven to 425 degrees and spray a 13 x 9 baking dish and set aside.

  2. Wash your fruit, slice and place in a bowl.

  3. Sprinkle lemon juice and cinnamon over the fruit and gently mix.

  4. Place the fruit in the baking dish.

  5. In a separate bowl mix the topping ingredients and mix well.

  6. Use your hands to finish mixing and then begin to crumble the mixture on top of the fruit until it fully covers the entire dish

  7. Place in oven and cook for 35 minutes

  8. Remove from oven and let cool for 10 minutes. 

  9. Can be eaten right away for refrigerated for a later time.
