Oatmeal Chocolate Chip Cookies

     Does one need any reason to make Oatmeal Chocolate Chip Cookies?!? Call me crazy but I think cookies as healthy as these don't need any reason at all. They are ooey and gooey and bonus points for being sugar, dairy and gluten free too!! 

All naturally sweetened with bananas, dates, cinnamon and stevia (in Lily's chocolate chips) they will add a little bit of joy to your day. Try it and see for yourself and tag me if you do!

Ingredients

  • 1 Cup Almond Milk

  • 1/4 Cup Chia Seeds

  • 2 Bananas, Mashed

  • 1/2 Cup Unsweetened Coconut Flakes

  • 1/4 Cup Almond Butter

  • 1 1/4 Cup Oatmeal

  • 2 Tbsp. Dates, Chopped

  • 1 tsp. Cinnamon

  • 1/2- 3/4 Cup Lily's Chocolate Chips

Instructions

  1. Preheat oven to 350 degrees and prepare a large baking sheet.

  2. In a bowl combine the almond milk and chia seeds. Let sit for 10 minutes and stir well.

  3. Meanwhile mash the bananas.

  4. Add the mashed bananas to the chia seed mixture.

  5. Add all remaining ingredients and stir well.

  6. With a melon baller scoop out cookie dough and drop onto prepared baking pan.

  7. With your hands gently flatten the cookie mixture.

  8. Bake on 350 degrees for 15 minutes.

  9. Let cool and enjoy!
