Cinnamon Baked Pears

The smell of cinnamon and baked pears is bound to fill your whole house with the ever so welcome Autumn vibe! The cooler temperature and the leaves turning make me head to the kitchen for all things  Fall inspired. This dessert is so healthy it could double for breakfast easily. If fact this may be making another appearence on Thanksgiving or Christmas morning we enjoyed it so much!

Ingredients

  • 4 Ripe pears

  • 1/2 cup melted coconut oil

  • 1/2 tsp. stevia

  • 1 cup old-fashioned rolled oats

  • 1/2 c finely chopped pecans

  • 1 1/2 tsp. ground cinnamon

Instructions

  1. Preheat oven to 400 degrees. Halves the pears and scoop some of the center to make room for the oatmeal crumble.

  2. In a medium bowl, combine oats, pecans, stevia, and cinnamon. 

  3. Pour the melted coconut oil on top and combine until mixed well.

  4. Spoon into pear halves

  5. Bake until pears are soft, 30-35 minutes 

  6. Top with coconut cream if desired and serve warm.
