Chocolate Pudding
I’ve hit guac bottom I know but in all seriousness this chocolate avocado pudding is all avo wanted. Enough avo puns...I love this little green and soft fruit (yes...avocado is actually a fruit!). Enjoy my Chocolate Pudding! Recipe is easily adaptable to increase or decrease sweetness.
Ingredients

2 large avocados

1/2 C unsweetened cocoa powder

1/3 C coconut cream

2 tsp. vanilla extract

1/2 tsp. cinnamon

3 tsp. stevia powder
Instructions

Remove avocado from the skins and place in a food processor (or blender)

Add the cocoa powder, coconut cream, vanilla, cinnamon, and stevia powder.

Pulse for about 1 minute stopping once to scrape sides.

With a spatula scrape the sides and place into a bowl.

Refrigerate up to 4 days.
