Cinnamon Apple Zucchini Medley

There's something about the end of a hot, humid, and steamy summer when the brisk mornings signal the beginnings of a new season with pleasant temperatures that sends me sprinting to my kitchen to add cinnamon and apples to just about every dish. The aroma fills the air better than any candle could impersonate and brings back memories of all the feel good Autumn activities we love to take pleasure in.


     Although I made this dish intending it for breakfast it could easily be enjoyed for lunch or dinner too on any beautiful Autumn day (or when you're daydreaming of Fall!). This dish a perfect combination of healthy fats, protein and antioxidants with a plethora of zucchini, celery and what else.... Autumn's poster child: the apple! Topped with cinnamon and cloves and drizzled with warm honey for an Autumn meal you wont forget!

Cinnamon Apple Zucchini Medley

Ingredients

  • 2 Large zucchini, diced

  • 3 Medium apples, diced

  • 4 stalks celery, diced

  • 3 Uncured sausage links (I used Savannah Sausage Co)

  • 1/4 red onion, finely chopped

  • 1/2 Tsp. Cinnamon

  • 1/8 Tsp. Cloves

  • Coconut Oil

Honey (Optional)

Instructions

  1. Preheat pan with coconut oil on medium heat.

  2. Dice the zucchini, apples, celery, and onion.

  3. Add ingredients to preheated pan and cook for 10-15 minutes covered stirring occasionally.

  4. Meanwhile dice uncured sausage and cook on medium heat in separate pan 10 minutes or until cooked thoroughly.

  5. Once the apple, zucchini, and celery mix is done add the sausage in and sprinkle cinnamon an cloves over top.

  6. Combine and drizzle honey on top for added sweetness.
